This is a gluten free granola recipe that is absolutely delicious and satisfying. It can be eaten as a snack, breakfast with almond milk, or sprinkled on your favorite yogurt.  For a little extra thyroid support add brazil nuts. Or for some healthy omega 3’s you can add walnuts or flax seeds. Remember to use organic products, and raw nuts and seeds.

1/2c unrefined coconut oil melted
2c rolled oats
1/2c almonds
1/4c cashews
1/4c pumpkin seeds
1/4c sunflower seeds
1/2c dried coconut shredded and unsweetened
1/2c real maple syrup
1/4c raisins
1/4c dried cranberries

Preheat oven to 350 degrees F.
Combine all of the ingredients except the raisins and dried cranberries.
Spread a thin layer of the granola on a large cookie sheet and bake for about 15-20 minutes depending on your oven. Make sure you turn the granola on the cookie sheet a few times while backing to avoid burning. Add in the cranberries and raisins once removed from the oven.

This lasts for a quite a few weeks so you can portion them into little containers for storage and enjoy!
